When you’re craving sweet-and-sour but don’t want extra calories and fat, turn to this recipe. From Prevention Healthy Cooking.

makes:4 servings

1/4cup sliced almonds
1tablespoon peanut or vegetable oil
4boneless, skinless chicken breast halves
1/2cup chopped shallots
3ounces mushrooms, sliced
1/3cup orange marmalade
3tablespoons soy sauce
1/4teaspoon ground black pepper
Orange slices (optional)
1.Place almonds in a large nonstick skillet. Toast over medium heat, shaking the pan often, 5 minutes, or until fragrant. Remove to a plate and set aside.
2.Heat oil in the same skillet over medium-high heat. Add chicken and cook 5 minutes, or until no longer pink, turning occasionally. Remove to a plate.
3.Add shallots to the pan and cook 5 minutes, or until soft. Add mushrooms and cook 5 minutes, or until mushrooms render their juices. Stir in marmalade, soy sauce, and pepper. Return chicken to the pan. Reduce the heat to low, cover, and simmer 10 minutes, or until a thermometer inserted in thickest portion registers 160°F and juices run clear. Top with almonds and orange slices, if using.

Delicious alternative to orange chicken
This dish turned out quite well and I am glad to feed a healthy meal to my boyfriend. He definitely agreed that the recipe was a keeper!

This was excellent and very easy. I served with white rice and roasted asparagus. It was super yummy! I definitely will make this again

Orange Almond Chicken
This recipe is great. My husband loves it. We put it with a nice wild rice blend and some steamed asparagus. It's so yummy and SO easy to make.

This was great....my whole family liked it. Even my 8 and 5 year old loved the chicken. I doubled the recipe for the sauce because I knew that would be the part that would get them to eat it. We served with steamed broccli which was great in the sauce. My husband and I fought over who was getting the leftovers next day.

This dish was fast and flavorful. The crunch that the almonds give the chicken is great. I added a some extra mushrooms because they are a favorite. I will definantly make this one again!

The sauce was delicious. The almonds added a nice flavor and texture. I wonder if the chicken were marinated in the sauce, if it would enhance the flavor of the chicken more. Either way, I'll make this again.
