makes:2 loaves (12 slices each)

2 1/2cups shredded zucchini (about 2 medium)
1cup unsweetened applesauce
1/2cup canola oil
3/4cup fat-free egg product or 3 eggs
2teaspoons vanilla
1 1/2cups sugar
1 1/2cups Gold Medal® all-purpose flour
1 1/2cups Gold Medal® whole wheat flour
3teaspoons ground cinnamon
1teaspoon baking soda
1teaspoon salt
1/4teaspoon baking powder
1/2cup chopped walnuts or pecans
1.Heat oven to 350°F. Spray bottoms only of 2 (8x4-inch) loaf pans with cooking spray.
2.In large bowl, mix zucchini, applesauce, oil, egg product, vanilla and sugar until well blended. Stir in all remaining ingredients except walnuts until well blended. Stir in walnuts. Spoon batter evenly into pans.
3.Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 1 hour.

I subbed brown sugar and used only 1 cup, replaced 1/2 cup of white flour with 1/2 cup of ground flax seed, used the three eggs, and added a handful of blueberries. DELICIOUS! i had no troubles with rising and cooked for about 55 mins! HIGHLY recommend!

Zucchini bread
We love this recipe. We did not substitue anything and it comes out great. We did add some bittersweet chocolate chips to the top of the loaf of a sweet taste and the little kids love it.

I added more wheat flour, and used brown sugar instead of regular sugar. tasted great. Everyone at work loved it.

This is awesome! I only added 1/2 cup flax seed meal to the ingredients and omitted the nuts. People who dislike zucchini loved it!! Even Kids!

I made this tonight! We loved it. It is very moist! I will try using 2 c wheat flour & 1 c reg flour next time. (I really liked the wheat flavor) I will make this often.

Zucchini-Pumpkin Bread
I substituted canned pumpkin for the applesauce, added cloves and nutmeg, used the egg substitute option, used brown sugar instead of white, and the bread was absolutely delicious!

Zucchini Bread
We I made this reciped I decreased the sugar by 1/2 cup. It was still plenty sweet. I also deleted the salt. Great recipe. Gave loaves to the neighbors. They loved it.

I also subsituted the egg for some flaxseed, but I used canned pure pumpkin instead of applesauce and loved it! Gave it a nice color too.

Healthified Zucchini Bread
We have really enjoyed this recipe. I use Splenda for Baking and put raisins in it. I made it tonite with some mini chocolate chips for something different.

Healthy zucchini bread
I had an over-abundance of HUGE zucchini in my spring garden. I sent 4 loaves of this recipe to the welding department at work to rave revues! Many requests for recipes as well. Very moist and enjoyed by all!

Very Delicious!
Thanks for the flax seed suggestion, it was great! I also decided to add in 1/2 a cup of pureed spinach and 1/2 a cup grated carrots and was really happy with the results. Happy Baking!

Really good!
I wanted to try to make some zucchini bread instead of going to the bakery. I'm so glad I found this recipe. It is great. I did read some of the other reviews first, so I did cut back a little on the sugar. I'm glad I did it was perfect. It's nice to find a healther version. I also added two tablespoons of flax seed to mine.

For an even healthier and still tasty version, replace 1/2 cup sugar with applesauce, use brown sugar, replace 1/2 cup regular flour with ground flax seed. Tastes great too!

Healthified Zucchini Bread
Very good. I would reduce the sugar more the next time I make this recipe. My grandson enjoyed this bread even though it had a bit of green showing. That's saying something good in itself. Every bit as good as the unhealthy version.

"healthified' zucchini bread
Just tried this recipe with our abundance of zucchini from our garden. The recipe is very good after being healified, however I do still find it to be very sweet, may consider cutting back on sugar or using a smaller amount of splenda for baking and add a dusting of powdered sugar for those who really enjoy the extra sweetness. Enjoy
