Substitution
No cooking spray? You can lightly brush the outsides of each sandwich with a little olive oil before cooking.

makes:2 sandwiches

1/4cup marinated artichoke hearts (from 6-oz jar), drained
1/4cup reduced-fat garlic-and-herbs spreadable cheese (from 6.5-oz container)
1/2cup loosely packed washed fresh baby spinach leaves, chopped
4slices soft whole wheat bread, 1/2 inch thick (1 1/2 oz each)
1/4cup roasted red bell peppers (from a jar), drained, sliced
4oz sliced cooked turkey breast or chicken breast
2tablespoons reduced-fat shredded Italian cheese blend
Cooking spray or olive oil cooking spray
1.Heat closed contact grill or panini maker for 5 minutes.
2.Place artichoke hearts on paper towels; pat dry. Coarsely chop artichoke hearts.
3.In small bowl, mix artichoke hearts, spreadable cheese and spinach. Spread mixture on 2 bread slices. Top with bell peppers, turkey and shredded cheese. Top with remaining bread slices. Spray both sides of sandwiches with cooking spray.
4.When grill is heated*, place sandwiches on grill. Close grill; cook 3 to 5 minutes or until bread is toasted and cheese is melted.
*To cook in skillet, heat 10-inch nonstick skillet over medium heat. Add sprayed sandwiches; cook 2 to 3 minutes on each side or until toasted and cheese is melted.

YUM!
We love this sandwich...I use my George Foreman grill...yummy flavors...have used Laughing Cow cheese wedges and also onion-flavored soft lowfat cream cheese spread. Try this recipe!

My parents came over and I made this meal for us all. We all really enjoyed these sandwiches! Very yummy! I plan on making these again. num-num!

Definitely worth trying!
I made these sandwiches last night and they were quite delicious. My husband LOVED them! I'm not a fan of red peppers, so I left those off, and I forgot to get reduced-fat spreadable cheese because I was shopping with cost in mind. The regular spread was $2.00 cheaper than the other brand that had reduced fat. I do like the fact that I have plenty of ingredients left to make more, especially because the ingredients were a little pricey. (The price is what makes me give it four stars.) Next time I think I will add more spinach and some ground pepper. Also, next time I think I will just grill them up in a frying pan like you would do with grilled-cheese sandwiches, because, in desparation, I used my HUGE George Foreman grill and they never seemed very grilled, just totally flattened! A small George F. grill would probably be ideal, though, if you don't have a regular sandwich grill. All-in-all, I think this recipe was delicious and we will be making these again. :)
