What is "Healthified"?

This moist cake gets its name because it is soaked in three milks ("tres leches" in Spanish). The cake can vary by region, sometimes containing fruit or chocolate, but the three-milk soaking is the key to its authenticity.
Substitution
Fresh raspberries would be equally as nice as serving with fresh strawberries.

makes:15 servings

1box (1 lb 2.25 oz) yellow cake mix with pudding
1 1/4cups water
1tablespoon canola oil
2teaspoons vanilla
2whole eggs
3egg whites
1can (14 oz) fat-free sweetened condensed milk (not evaporated)
1can (12 oz) evaporated fat-free milk
1/2cup fat-free (skim) milk or fat-free half-and-half
1container (8 oz) frozen reduced-fat or fat-free whipped topping, thawed
Sliced fresh strawberries, if desired
1.Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13x9-inch pan with cooking spray.
2.In large bowl, beat cake mix, water, oil, vanilla, whole eggs and egg whites with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
3.Bake 29 to 35 minutes or until edges are golden brown and toothpick inserted in center comes out clean. Let stand 5 minutes. Poke top of hot cake all over with fork or wooden skewer, wiping fork occasionally to reduce sticking.
4.In medium bowl, stir condensed milk, evaporated milk and skim milk until blended. Slowly pour evenly over top of cake. Cover; refrigerate about 1 hour or until mixture is absorbed into cake.
5.Spread whipped topping over cake. Refrigerate until serving time. Garnish with strawberries. Store in refrigerator.

Not Happy
I made this cake and followed the recipe. The cake was soggy I like my cakes moist, but that was ridiculous.

Tres Leches Cake
This cake was Fabulous! My daughter makes it, & it is now one of her specialities. made it for a family function & many guestsb left w/ the recipe.

good and simple
I made this cake for a family barbeque and had to give the recipe to two sisters-in-law! Everyone really liked it. I even used a reduced sugar cake mix to make it just that more healthified. I will certainly make this again -- it was also quick and easy to put toghether.

cake mix w/Splenda for diabetics
I just made this for a work pitch-in and it went over very well. Because there are several diabetics in my office, I used the Pillsbury cake mix w/Splenda and sugar free Cool Whip, so that they could indulge. I was surprised by how rich it was since I didn't know what to expect. I have had to share the recipe with 2 people already and expect more requests before the day is over. This is definitely great for a big group & not something to make for a small group due to how rich it is.

OMG!!
This cake is delicious. I've tried other recipes for Tres Leches Cake before. They've been full calories and often didn't turn out right. This recipe was very easy to make and used ingredients that I keep in my house. Full of flavor!!! You'd never know that this was the "healthified" version. I'd highly recommend it!

Easy pleaser
I made this for everyone at work and it was a huge hit. Just the right coolness and moist texture. I recommend baking the cake according to sight (golden brown, plump). I also let the cake soak over night before applying the cool whip topping. It then sat in the fridge at work all morning. Just follow the recipe, don't rush to finish. This is remarkably easy (to the scratch recipe) and does have a sweet finish - which shouldn't be a surprise considering the milk used.

disappointed
I like trying new recipes and this one looked really good, but I was sadly disappointed with it. I forgot I am not a sweetened condensed milk fan, and that was the taste that hit me first and stayed with through to the aftertaste. Too bad, because it seemed so light and freshing, especially after a filling dinner. Any suggestions for a substitute for sweetened condensed milk, please let me know. Thanks. Jane

Oil switch out
When I make cakes I found that a low fat and healthy switch on the oil. Subsitute sugar free applesauce in equal amounts for the oil called for in the recipe. There is no taste difference, so the family still gets a treat, but it is a bit healthier.

Cholestoral
Just a suggestion for the whole eggs in the recipe. I will often use regular egg beaters in my recipes when it calls for eggs. They lower the calories and the cholestoral.

I made this and my roommates LOVED it. I thought it was delicious as well, but the more fresh it is, the better. After a couple days it starts to taste like soggy strawberry shortcake. It was really good though, I was afraid it would taste strange as a healthy recipe but it was definitely creamy and rich, I can't imagine what the fattening cake would taste like, ick.

I don't normally bake... but this interested me, so I made it for a picnic last weekend. It was easy to make and everyone LOVED it!!! It's a keeper!!
