Substitution
Spinach is a nice substitute for the romaine, or mix spinach and romaine instead.

makes:4 servings

2boneless skinless chicken breasts (about 4 oz each)
1/3cup reduced-fat Caesar dressing
1/8teaspoon pepper
2cups coarsely chopped romaine lettuce
1/4cup shredded carrot (1 small carrot)
2tablespoons shredded Parmesan cheese
2whole wheat pita (pocket) breads (6 inch), cut in half to form pockets
1plum (Roma) tomato, thinly sliced
1.Set oven control to broil. Brush both sides of chicken with 1 tablespoon of the dressing; sprinkle with pepper.
2.Place chicken on rack in broiler pan. Broil 4 to 6 inches from heat 12 to 15 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F). Cool about 5 minutes. Cut into thin slices.
3.In medium bowl, toss lettuce, carrot and cheese with remaining dressing until coated. Fill each pita bread half with tomato and chicken; top with lettuce mixture.

Great week night meal. Very filling and delicious. I mixed in broccoli slaw w/ shredded romaine and served the sliced tomatoes on the side. Definitely make this again, soon.

Messy
This did not work out as well for me. Cutting the pitas in half made them too thin and they ended up tearing and becoming a bit of a disaster. Folding the pita worked much better for us.

I am a huge salad fanatic but I'm not a big fan of tomatoes but i didn't care because it tasted too good. It was quick and i will probably be having it once a week now.

Chicken Caeasr Pitas
Fantastic! I didn't have reduced fat dressing on hand and I added Brocoli slaw. Even my "meat and potato's" Husband love it! Came together really quickly, I used my Foreman Grill. Will make it again when I host the next play date should be a hit with the Mom's.
