Blueberries are a favorite of mine so I am always on the lookout for new or favorite recipes that contain them. I’d like to share a yummy recipe for a breakfast or coffee bread that I rediscovered recently. I've made this bread in the past and it reminds me of the thick slices of quick bread that you can often get at coffee shops. But here’s the best part, you can make your own for a fraction of the cost.
An entire loaf of Blueberry-Orange Bread can be made for about $6.00 with a single slice costing less than $ .40, amazing when you consider what you might pay in a coffee shop. Clip the coupon that's available, and it will cost you even less. Also, this bread contains some great nutritional value that includes fiber, calcium, vitamin C and Iron—stuff that you don’t always get with purchased products. Plus it’s fairly low in calories and fat.

This loaf is moist, sweet and delicious, and great made with either fresh or frozen blueberries. But when they are in season as they are now, I like to use fresh berries. When you shop for berries, look for those that are firm, uniform in size, deep blue in color and not shriveled. Plan to rinse them (and drain well) just before using.
