Chicken on the Grill

This weekend, I finally uncovered my grill in the hope that summer would actually arrive. This ritual act of spring is always highly anticipated and brings the promise of warm weather plus wonderful aromas and flavors of grilled foods. With the grill uncovered, I started my quest for new recipes to try and discovered a great new chicken recipe that intrigued me.

Grilled Chicken with Peppers and Artichokes fits all of my favorite criteria—few ingredients, easy directions and a great nutrition profile. Also, the reviews on the website gave me positive vibes and I was sure that this would be a tasty dinner for the evening.

                                                          

The recipe calls for marinated artichoke hearts and if you’ve not used them before, be ready for a great spark of flavor from the marinade that the artichokes are packed in. I like that this tasty marinade is not drained away in the recipe but is actually used as part of the marinade for the chicken, adding a hefty boost in flavor. The recipe says to marinate at least 30 minutes but I marinated about 2 hours. 

I served the chicken with wild rice, asparagus spears and sliced French bread. There was enough of the artichoke sauce to top the chicken and have a drizzle over the rice. If you are looking for an easy, delicious grilled chicken recipe, this one certainly qualifies. And because we only had three diners, I had a chicken breast left for lunch the next day. I plan to make the recipe again—hope you’ll try it too.
