Cheesy Skillet Dinner

Family favorite flavors, quick to make, less fat, fewer calories and a great price describe a recipe that we recently tested in our kitchens. The original recipe for Mexican Pasta Skillet came to us from a consumer who said that she made the recipe for dinner at least once a month. She thought that both fat and calories could be reduced so that it would be a better choice for her family. So our team went to work to make changes that would improve the nutrition profile but, as always, we wanted to retain the original integrity and deliciousness of the dish.

Keeping the ground beef in the recipe was important to all of us but we did test with ground turkey and it can be used if you prefer. Also, you can choose to make it with regular or multigrain macaroni. We actually liked it both ways so you can pick the one that your family will like the best. If you’ve not used multigrain pasta and want to try it, you’ll find it slightly chewier and firmer than regular pasta.

Probably the best part is the price to make this recipe—$1.74 per serving or just over $10.00 for the whole recipe. If you clip the coupons on the website, you’ll save even more. It’s a true value meal in these economic times.

This is a great serve-from-the-skillet meal that can be on your table in 30 minutes. It’s warm, hearty, cheesy and full of flavor, but with 68% less fat and 26% less calories than the original it’s a much better choice for all of us. So skip the fast food and make dinner at home tonight. You'll be glad you did!
