Eggs supply chromium, a mineral we need in small amounts. Preliminary research suggests that people with diabetes may need a bit more chromium than others do.
Getting your "daily 5" of veggies couldn't be easier than in this hearty skillet egg dish loaded with the good stuff. From eatbetteramerica.

makes:4 servings

2cups chopped broccoli
2cups chopped spinach (about 3 oz)
1large onion, chopped (1 cup)
1cup sliced mushrooms (about 3 oz)
1medium carrot, cut into julienne (matchstick) strips (about 1/2 cup)
1small zucchini, cut into julienne (matchstick) strips (about 1/2 cup)
3/4cup fat-free tomato pasta sauce (any variety)
1/4teaspoon pepper
4eggs
1/4cup shredded fat-free mozzarella cheese (1 oz)
1.Spray 12-inch skillet with cooking spray; heat skillet over medium heat. Add broccoli, spinach, onion, mushrooms, carrot and zucchini; cook 8 to 10 minutes, stirring occasionally, until vegetables are crisp-tender.
2.Stir in pasta sauce and pepper. Cook, stirring constantly, until thoroughly heated.
3.Make four 3-inch holes in vegetable mixture, using large spoon. Crack 1 egg into each hole. Cover; cook about 5 minutes or until egg whites and yolks are firm, not runny. Sprinkle with cheese. Serve immediately.

Perfect romantic brunch
This is a very simple and delicious recipe. I cooked it for brunch and my wife loved it!!!

Surprisingly good!
My Husband could not get over how good this was, he even printed it out to take to work to share with someone that is trying to diet. I used frozen spinach and broccoli and added yellow squash. I had to cover it to make the eggs cook on top (don't remember if it says to or not) My husband liked his better with rice, I preferred it as is. My 3yr old even liked it, and that says a lot coming from a kid that normally just wants pizza, hamburgers, and toaster strudels!

YUMMY!
I loved this one, but I made some minor changes. I took out the tomato sauce and mozzarella and it was very good! (revised:124 cals) I highly reccomend it!

MMM....GOOD!!!
I absolutly loved it. I recommend cooking the eggs in a different pan. The eggs dont get cooked all the way through when added to the veggies. But other wise this is very delicious. You can also add whatever veggies you would like and it will still taste amazing!

Mmm Mmm Good :)
This recipe was ridiculously easy to throw together & I shared with my room mate who agreed-deeelicious! The only thing I would personally change is perhaps using only the egg whites instead of the entire egg...it was just an enormous mouthful off egg. Otherwise, I would definitely make again. I was also so over zealous to try it that I forgot the cheese both the night of and the next day for lunch. Speaking of lunch, I stuffed a pita with the left overs & it made for a terrific warm sandwich!

Pretty good
I added different veggies (whatever I had at home) - green peppers, onions and cilantro, and replaced the pasta sauce with hot salsa. I must say it tasted very good. Its a little tricky to cook, especially because I like my egg completely done from the inside as well. But worth the experiment.

Yummo!
This was flavorful and colorful! we loved it!! if it was mushy, someone over cooked it. If it was bland, someone used tomato paste instead of pasta sauce.

Veggie Poached Eggs
I've been wanting to try this recipe for months. It didn't disappoint. The eggs were creamy and the veggies very filling. Perfect post-workout meal. In a pinch a bag of frozen, mixed stir-fry veggies would do just fine. Endless variation possibilities (Thai, Mexican, Chinese, etc.) Love it.

Quick and tasty
I was surprised by how good this tastes, because it doesn't sound so good. Even my husband likes it, and he is not a big fan of vegetables. I like it because I usually have most of the ingredients on hand so it is a good, quick meal.

I didn't think this was very good, and my husband thought it was awful. It was just a strange mixture of flavors and somewhat bland. We both decided that by themselves, vegetables and eggs are good, but not together. I will not make this again.
